THE LAND OF CHEESE AND SALT

The village of Salinas in the Bolivar province is well-known for its cheese factory. They also make fine chocolates and sausages. On the other side of the river, there is a salt mine in the open. Nobody could explain to me how it works, so here’s my hypothesis: the salt gets stuck in small man-made pits as the water evaporates.

When the salty water overflows, it leaves behind a trickle of salt crystals. The question is: do they use this salt for the maturing of their cheese?

TERRE DE FROMAGE ET DE SEL

A Salinas dans la province Bolivar, on fabrique du fromage. Des chocolats, et des saucisses aussi. De l’autre côté de la rivière se trouve une mine de sel à ciel ouvert. Personne n’a su m’expliquer comment la mine fonctionne, alors voici mon hypothèse: des petits puits on été creusés dans la roche pour récolter le sel quand l’eau s’évapore.

En s’écoulant sur la pierre, l’eau salée délaisse derrière elle des ruisseaux de petits cristaux blancs. La question étant: est-ce le sel de cette mine que Salinas utilise pour faire son fromage?
